About the Recipe
This dish is very tasty and super healthy. You can use all organic ingredients and add salt or pepper if you feel it needs it.
I like to serve this over organic brown rice, but it works well over pasta, too. The brown rice takes some time to prepare so make sure to start cooking the rice before you start the main dish.

Ingredients
1 lb. chicken breast
5 oz. baby spinach
2 medium tomatoes, chopped
1 large carrot, chopped
1 cup broccoli florets, chopped
4 scallions, green part chopped
4 tbsp olive oil
4 garlic cloves
2 tsp tomato paste
1/2 cup crumbled feta cheese
1/2 cup pitted and sliced olives
1/2 tsp coriander
1/3 cup fresh basil, torn into small pieces
Preparation
Step 1
Let the chicken rest at room temperature for ten minutes before cutting the chicken breasts into small bite-sized pieces.
Step 2
Prepare the vegetables and spices.
Chop the broccoli
Chop the tomatoes
Chop the carrot
Chop the scallions
Mince the garlic
Step 3
Sautee the chicken pieces in a large skillet (enough to hold all the ingredients) with olive oil for 4-5 minutes.
Step 4
Add the chopped tomatoes and cover the skillet with a lid for another 3 minutes.
Step 5
Stir in the tomato paste (add a small amount of water to the skillet, if desired) and mix well.
Step 6
At medium heat, add the carrots, scallions, broccoli, and coriander. Add a tbsp of olive oil and cook until the broccoli is ready.
Step 7
Add the fresh spinach and mix until the it blends well into the rest of the ingredients.
Step 8
Add the garlic, basil, olives, and feta cheese and mix well. Cook for about one minute more and remove from heat.
