Grilled Halloumi with Peas and Mint

This simple yet flavorful dish brings together the bright sweetness of peas, the refreshing lift of mint, and the golden, salty richness of grilled halloumi. Lightly dressed and served warm, it's a perfect celebration of seasonal ingredients - fresh, satisfying, and ready in minutes, Ideal as a side or a light main, it balances comfort with a touch of elegance.

Ingredients

  • 1 1/2 cups petite peas

  • 2 Tbsp olive oil

  • 2 Tbsp fresh mint leaves, torn into small pieces

  • 1 garlic clove, minced

  • 1 Tsp grated lemon zest

  • Salt and freshly ground pepper

  • 1 (8-ounce) package Halloumi cheese, cut crosswise into 8 slices, rinsed and patted dry

  • Extra-virgin olive oil, for finishing

  • Fresh lemon juice for drizzling

Preparation

Step 1


For fresh peas, blanch in boiling, salted water until tender, around 3 minutes. If frozen peas, skip this step.


Step 2


Cook the peas with the mint

  • In a large nonstick skillet, heat 1 tbsp olive oil over medium to high heat

  • When oil shimmers, add peas, 1 tbsp mint leaves, garlic, and lemon zest

  • Cook until peas heated through, around 3 minutes

  • Transfer peas to bowl

  • Taste and add preferred amount of salt and pepper


Step 3


Grill the halloumi

  • Return the skillet to medium heat and add remaining 1 tbsp oil

  • Add cheese slices and grill until golden brown, around 1 minute per side


Step 4


Serve

  • Place 2 cheese slices and sprinkle the pea mixture around it

  • Drizzle with extra-virgin olive oil and lemon juice

  • Top with remaining mint, and serve
