About the Recipe
The sweet tang of balsamic-simmered tomatoes melts into buttery garlic pasta, creating a dish that feels like a hug at the dinner table. My yiayia taught me how to cook this one when I was around 12, and my family loves it.

Ingredients
8 oz Spaghetti
3 Tbsp Butter
1 Tsp Garlic Salt
3 Roma Tomatoes
2 Tbsp Parsley
1 Tbsp Chives
1 Tbsp Italian Seasoning
5 Tsp Balsamic Vinegar
1/4 Tsp Sugar
1 Cup Parmesan Cheese (for garnish)
Preparation
Step 1
Finely dice the tomatoes
Slice the chives thinly
Finely chop the parsley leaves
Soften 2 Tbsp butter (about 20 seconds in the microwave)
Mix the garlic salt with the softened butter
Step 2
Cook the pasta
Step 3
While pasta is cooking...
Heat a drizzle of olive oil to a pan on medium heat
Add the tomatoes to the pan
Mix the tomatoes with the oil
Add the Italian seasoning and cook for a minute or so
Step 4
Add the vinegar and 1/4 tsp sugar (to balance the acidity of the tomato and vinegar)
Simmer for another minute or so
Step 5
Remove the pan from heat
Add 1 Tbsp plain butter to the pan until melted
Add the chives and parsley to the pan and stir
Season with salt and pepper
Step 6
Drain the pasta when finished cooking
Add the garlic butter to the pasta and mix
Step 7
Serve the pasta, topped with the balsamic tomato
Garnish the dish with parmesan cheese
